- 8oz lobster meat
- 8oz scallops
- 1lb haddock
- 8 tbsp butter
- 3 tbsp minced onions
- 1–2 tbsp salted onions
- 8 cups cubed potatoes
- 8 cups cold water
- Pinch salt and pepper
- 1/4 can evaporated milk
Instructions
- In a large pot melt 4 tbsp butter, add the lobster meat and sauté, remove the lobster and set aside.
- Melt remaining 4 tbsp of butter and sauté onions until translucent, add your potatoes, salt and pepper and stir.
- Add the water, bring to a boil and then reduce to a simmer, cook until the potatoes are el dente.
- Incorporate the seafood ,bring to a simmer and finish with evaporated milk.
