Ingredients
- 2 avocados
- 1/4 cup red onion
- 1 tbsp. mayonnaise
- 1 tbsp. olive oil
- 1/2 lemon, juiced
- 8 ounces snow crab, drained
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp. Hot Under the Kilt Acadian Cajun seasoning ( substitute Old Bay)
- 1 tbsp. parsley
- 1 tbsp. dill
- 1 tbsp. cilantro
- fresh grated parmesan cheese
Instructions
- Cut avocados in half, scoop out 3/4’s of the inside and place in a bowl, separate the meat from the shell and let it sit inside.
- Add the red onion, mayonnaise, lemon juice, olive oil, 1/2 of the snow crab, seasonings, and herbs, mix well.
- Gently break up and fold in the remining snow crab meat, stuff into the avocado halves.
- Top with the parmesan cheese and a bit of fresh cracked black pepper. Garnish with parsley sprigs.
