Potato Lyonnaise

Ingredients

  • 2 lbs potatoes, washed and thinly sliced using a mandoline
  • 2 tbsp olive oil, divided
  • 2 tbsp butter, divided
  • 1 lb Onions, julienned
  • 1 tsp baking soda divided
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup chopped parsley

Instructions

  1. Cover the potatoes with cold water and bring to a boil, reduce to a simmer and cook until fork tender.
  2. Add 1 tbsp olive oil and 1 tbsp butter to a saute pan, melt and add the onions, cook until they begin to turn golden, sprinkle with 1/2 tsp baking soda and continue to cook until they are golden brown, remove from the pan and set aside.
  3. Add the remaining olive oil and butter to the ban, once melted add the potatoes, sprinkle with remaining baking soda and cook until they begin to turn golden, season with salt and pepper, add the onion’s and heat through.
  4. Finish with the parsley.
